Mix to produce bread

The mix Pool helps to compensate production difficulties due to the variations of environmental conditions as well as to the raw material characteristics. It also increases the tolerability of the dough during time leavening.
This mix is indicated for knead with the add of fats and sugars and to produce with direct method.
The dosage vary depending on the kind of Pool product used; the dose starts from 0,4% to 1,5%.
